Hashbrown Potato Pie

Serves 4-6.
Of course, having "potato" in the name of this recipe is somewhat redundant...
 

Ingredients

  • 5 large eggs
  • 1/2 cup milk
  • 3 cups country-style hash browns thawed
  • 1/3 cup green onion
  • 1/2 teaspoon salt
  • 1 teaspoon hot pepper sauce
  • 4 slices bacon (crisp and crumbled)
  • 1 1/2 cups shredded cheddar cheese 

Tools

  • 9-inch pie plate

Instructions

  • Beat eggs and milk.
  • Stir in potatoes, green onion, salt, and pepper sauce.
  • Stir in 1 cup of the cheese and half of the bacon.
  • Pour into a greased 9-inch pie plate.
  • Bake at 350 degrees for 25-30 minutes.
  • Top with remaining cheese and bacon.
  • Bake 3-4 more minutes.
