1 egg (slightly beaten)

1/4 cup corn oil

4 tablespoons sugar

1 1/4 cup buttermilk

3-4 tablespoons butter

9-10 inch oven-going skillet (or metal baking pan)

Instructions

Prepare the almonds

Combine cornmeal, flour, baking powder, salt and baking soda. Set aside.

Whisk together egg, oil, and sugar. Whisk in buttermilk.

Melt butter in 9-10 inch oven going skillet. Lift pan and coat sides.

Add egg mixture to dry ingredients. Mix until just moistened. Turn into
skillet.

Bake at 375 for 25 minutes or until toothpick inserted in center comes
out clean.
