Skillet Cord Bread

Serves 4-8, depending on appetite
 

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg (slightly beaten)
  • 1/4 cup corn oil
  • 4 tablespoons sugar
  • 1 1/4 cup buttermilk
  • 3-4 tablespoons butter

Tools

  • 9-10 inch oven-going skillet (or metal baking pan)

Instructions

  1. Prepare the almonds
    • Combine cornmeal, flour, baking powder, salt and baking soda. Set aside.
    • Whisk together egg, oil, and sugar. Whisk in buttermilk.
    • Melt butter in 9-10 inch oven going skillet. Lift pan and coat sides.
    • Add egg mixture to dry ingredients. Mix until just moistened. Turn into skillet.
    • Bake at 375 for 25 minutes or until toothpick inserted in center comes out clean.
