Ingredients
- 1 pound Mild Italian Sausage
- 1 cup chopped onion
- 8 cloves garlic minced
- 5 cup beef broth
- 1/2 cup water
- 1/2 cup red wine
- 16 oz. tomato sauce
- 2 - 16 oz. cans stewed tomatoes
- 1 cup sliced carrots
- 1 cup sliced zucchini
- 1 pkg. cheese tortellini
- 2 tablespoons fresh basil
- 2 tablespoons fresh oregano
- 3 tablespoons fresh parsley

Instructions
- Brown sausage with onion and garlic until tender.
- Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato
sauce and sausage to soup pot.
- Bring to boil; reduce heat and simmer uncovered for 30 minutes.
- Stir in zucchini, tortellini and parsley.
- Simmer covered for another 30 minutes.
- Garnish with parmesan cheese.
